Delicious and crispy pancakes/crepes in Morsø Skillet

- with apple compote and lemon cream

Approx. 12 pancakes


Pancakes/Crepes – so crispy in cast iron
3 eggs
300ml milk
150ml (86g) flour
1/2 tsp. salt
1 tbsp. vanilla sugar
100ml 18 % table cream


4 apples
50ml water
50ml fresh squeezed lemon juice
200ml (170g) sugar
1 tbsp. vanilla sugar
2 pinches ground cinnamon


Icing sugar
Lemon cream
150ml heavy cream
Juice and zest from 1/4 organic lemon
2 tsp. Icing sugar

Apple compote
Peel the apples, remove the core and cut the apples in small pieces. Mix the apple pieces with water, lemon juice, and sugar in a casserole. Leave to simmer until the apples are tender. Add vanilla sugar and ground cinnamon.

Beat eggs and milk lightly. Add flour, salt and vanilla sugar and mix well. Add cream and leave for 10 minutes. Bake thin pancakes in the Morsø Skillet. Dust with icing sugar and chopped walnuts, if desired. Put a tbsp. of apple compote and some lemon cream next to the p
