Classic Club Sandwich

Procedure
A favourite classic with juicy chicken, crisp fried bacon and home-made curry dressing.
Making it takes next to no time and it just tastes so good. Try serving it with a piece of good, home-made bacon – obviously, that requires a bit more time but it is a fantastic combination worth the effort.
- Mix all dressing ingredients, season to taste with salt and pepper, and place the dressing in the fridge.
- Heat up the oil in a frying pan, season the chicken with salt and pepper, and fry the meat until it is done (approx. 5 minutes on each side). Allow the meat to rest for a moment before slicing it.
- Use the same frying pan to fry the bacon until crisp and then leave the bacon on a sheet of paper towel for a minute.
- Toast all the bread slices in a toaster, perhaps greasing with a bit of cooking spray to make them extra crisp.
- Spread some curry dressing onto 2 slices of bread and garnish with a bit of lettuce, tomato, slices of chicken and bacon. Place another slice of bread on top and garnish with dressing, lettuce, tomato, chicken and bacon. Finish off with the last piece of bread and spread some curry dressing on the inside of this piece of bread as well.
Ingredients
- 6 slices of good-quality toast
- 2 chicken breasts
- 8 slices of tomato (cut it yourself and make some nice, thick slices)
- 1 big tomato
- 1 handful of mixed lettuce
- A bit of olive oil
- Salt and pepper
- Cooking spray (option)
Curry dressing
- 1 dl (0.4 cup) sour cream 18%
- 1-2 tbsp mayonnaise
- 1 tsp good-quality curry
- 1 tsp turmeric
- ½ tsp onion powder
- 1 tsp sugar
- Salt and pepper
