Langoustine with Mango Salsa

Procedure

Clip the shield off the tail of the langoustines and pull the meat out with tongs.

Sprinkle salt and sugar lightly on the meat and leave for 20-30 minutes.

In the meantime, heat the forno well.

Peel the mango and cut into small cubes.

Also cut the tomatoes into small cubes and finely chop the spring onions, chili and garlic.

Mix the mango, tomato and chopped ingredients with olive oil and maybe some honey and citrus juice.

Season with salt and pepper.

Place the langoustines on the grill insert and place above the embers in the forno for 5 minutes or until the meat feels slightly firm.

Serve with mango salsa and nice bread.

Ingredients for 4 persons as a starter (double up for a main course)

  • 4 large or 8 small langoustines
  • A little salt and sugar
  • 1 ripe mango
  • 2 spring onions
  • 1 chilli
  • 1 lime
  • 2 ripe tomatoes
  • 1 garlic clove
  • 2 tbsp good quality olive oil
