Pitta Bread with Tender Spinach, Goat Chesse

Procedure

Pitta bread with tender spinach, goat cheese, beetroot crudités and smiling eggs.

 

Boil the eggs for 6 min. Rinse in cold water and shell them. Peel the beetroot, cut into ultra-thin slices with a mandolin and lay the slices in iced water for 5 min., to give a crisp bite. Warm the pitta bread with 2 slices of goats cheese in each, so that they melt easily. Chop the eggs, and

Fill the pitta bread with tender spinach, crisp beetroot, egg, goats cheese and coarsely chopped salted almonds.

Ingredients

  • 2 good pitta breads. You can use same recipe as for pizza dough.
  • 2 large eggs
  • 1 beetroot
  • 1 handful tender spinach leaves, rinsed
  • 4 thick slices of goats cheese
  • 1 handful salted almonds, coarsely chopped
