Whole leg of lamb with lemon potatoes an herb salsa

Perfect dish to cook for family and friends for Sunday roast. Easy simple and delicious.
As always get the best ingredients you can get hold of. It’ll make the end product so much better.
I have cooked this lamb in a Forno. You can cook the leg of lamb in the Forno gas grill also. You just need place the leg of lamb on a cast iron plate, and to use indirect heat.
The lamb
- 1 free-range leg of lamb
- A bunch of rosemary
- 8 garlic cloves cut into 2 mm slivers.
- Olive oil
- Salt and pepper
Remove any unwanted membranes. Make small cuts into the meat. Inset garlic-slivers and rosemary sprigs into the cuts.
Drizzle with olive oil and rub the oil into the meat. Season generously with salt and pepper.
Lemon potatoes
- 800 g waxy potatoes
- 4-5 sprigs thyme
- 1 unwaxed lemon, cut into 8 pieces.
- 4-5 garlic cloves
- Olive oil
- Salt and pepper
Cut the potatoes into quarters and place in a bowl thyme, garlic and lemon. Season with salt and pepper, and 2 tbsp olive oil. Mix well and place the potatoes on an iron cast plate.
Place the leg of lamb on top of the potatoes and place in the Forno. Turning every 10 minutes or so. You want the meat to be cooked medium, so about 58-60c in the center. Leave the meat to rest.
Herb salsa
- 1 handful flatleaf parsley, finely chopped.
- 1 handful mint, finely chopped.
- 1 red chili, de-seeded and finely chopped.
- 1 garlic clove. Finely chopped and crushed with salt.
- Juice of ½ lemon
- 4-5 tbsp olive oil
In the meantime, add all the ingredient to a bowl and mix well. Season with salt and mor lemon juice if needed.
Slice the meat and serve with some lemon potatoes and a spoonful of the herb salsa.
