Marinated flash baked salmon with apple, cottage cheese and herb salad

Procedure

Marinade salmon

Sprinkle the salmon with lemon zest, salt and sugar. Grind on plenty of pepper and chill for 1 hour. Take it out and remove salt and sugar. Bake the salmon for 10 min. at 200 degrees, until it just flakes when you press on it. Do not over-bake. That will make the fish dry and taste rancid.

Salad

Chop all the herbs coarsely and peel the cucumber in strips. Mix it all with the cottage cheese, apple cubes, lemon juice, salt and pepper. Serve the salmon with the cottage cheese mix on page and garnish with masses of cress and lambs lettuce.

Marinated salmon

  • 250 g salmon
  • 1/2 organic lemon, peeled
  • 50 ml salt
  • 50 ml sugar
  • Pepper

Salad

  • 1 bunch chives, finely chopped
  • 1 bunch dill, finely chopped
  • 1 cucumber
  • 300 ml cottage cheese
  • 1 large apple, cut into small cubes
  • 1 organic lemon
  • Salt and pepper
  • 1 tray cress
  • 1 bag lambs lettuce or other favourite salad
