Stew with potatoes in tomato sauce

Procedure

A simmered stew that brings everyone around the pot and fills the air with warm spices and cozy vibes. The small potatoes absorb the smoky paprika and tomatoes, while fresh thyme adds a light, green note. A simple, homely dish perfect for good conversations and long summer evenings by the fire.

Sauté the onion and garlic in a pot over the campfire.

Add the potatoes, chopped tomatoes, water, paprika, and Maldon Salt. Add more water if the sauce is too thick.

Let simmer covered for about 30–40 minutes until the potatoes are tender.

Serve with good bread.

  • 500 g small potatoes, halved
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 can chopped tomatoes
  • 2 dl water
  • 1 tsp Maldon salt
  • 1 tsp smoked paprika
  • Fresh thyme
