Summer skewers over the campfire

Procedure

Summer skewers are campfire coziness at its finest – simple, colorful, and full of flavor. It’s a dish that invites sharing, tasting, and enjoying together. Simple ingredients, cooked over glowing embers. It doesn’t need to be more complicated than that.

Soak the skewers in water for about 30 minutes – or longer if possible.

Mix the oil with the spices. Set aside 2 tablespoons of the marinade and toss the pork cubes in it. Let them marinate for a while.

Cut the cauliflower into evenly sized florets and slice the pointed cabbage into large wedges. Thread the vegetables onto skewers and brush with the oil mixture. Add the marinated pork cubes to skewers as well. Grill over the campfire until lightly browned and the meat is cooked through.

Finish with a final sprinkle of Maldon salt and serve with good bread.

Ingredients

  • Wooden skewers
  • 500 g pork, cut into large cubes
  • 1 pointed cabbage (or sweetheart cabbage)
  • 1 cauliflower
  • 0.5 dl olive oil
  • 1 tsp Maldon salt
  • 2 tbsp sweet paprika
  • A pinch of cayenne pepper or chili
  • 1 tsp thyme
  • Freshly ground black pepper
  • Good bread for serving
