Grilled Cod with Brown Butter, Capers, Peas and Dill

Ingredients

4 pieces of cod loin

150 g butter

200 g fresh peas, shelled

1 bunch of dill, coarsely chopped

1 lemon, cut into wedges

2-3 tbsp capers
 
 

Procedure

Grilled cod and brown butter
Place your Morsø cooking platter on the grill and let it heat up thoroughly for at least 15 minutes until the cast iron is piping hot. Add the first 50 grams of butter to the platter and immediately place the cod loins on top. Sear the fish for about 30 seconds on each side to get a nice crust without drying it out.
 
Peas, capers, and dill
Add the shelled peas, capers, and coarsely chopped dill to the cooking platter around the fish. Add the remaining butter to the platter, allowing it to melt and foam beautifully over the entire dish while still on the grill.
 
To serve
Remove the cooking platter from the grill and serve the dish immediately – piping hot and sizzling, directly on your Morsø cast iron with fresh lemon wedges.
 
Tip: You can easily use other types of fish for this preparation on the cooking platter, such as salmon, plaice, or saithe fillets.
