
Grilled Halibut with Fennel and Parsley Cream
Ingredients
Grilled Halibut
4 pieces of halibut
3 tbsp oil
Salt and freshly ground pepper
Grilled Fennel and Onion
4 fennel bulbs
2 large spring onions
Oil for brushing
Salt and freshly ground pepper
Parsley Cream
100 g parsley pesto
100 g sour cream
Procedure
Grilled Halibut
Coat the halibut in a little oil, salt, and pepper, and let it rest on the counter for 10 minutes. Preheat your Morsø Cucina Pro to full heat, and grill the fish for 30-50 seconds on each side, depending on the thickness. Remove the fish from the grill and let it rest for 2 minutes before serving to keep it beautifully juicy.
Grilled Fennel and Onion
Turn the grill on low heat. Wash the fennel and onion, cut them in half, and toss them in oil, salt, and pepper. Place the vegetables on the grill rack and grill for 7-10 minutes over low heat. Remove them from the grill, and flash-grill them again at the very end when the fish is cooking so everything is piping hot.
Parsley Cream
While the grill and vegetables take care of themselves, quickly mix the fresh cream. Simply combine the sour cream and pesto in a bowl, and set the parsley cream aside until you are ready to plate.
To Serve
Plate the perfectly grilled halibut alongside the warm, grilled vegetables. Serve immediately, straight from the Cucina, with the cold, creamy parsley cream providing the perfect contrast.
